Hot water freezes faster than cold – Revealed

Is that true that ‘HOT water sometimes freezes faster than cold water’. This peculiar phenomenon has baffled scientists for generations, but now there is evidence that the effect may depend on random impurities in the water.
Fast-freezing of hot water is known as the Mpemba effect, after a Tanzanian schoolboy called Erasto Mpemba (see “How the Mpemba effect got its name”). Physicists have come up with several possible explanations, including faster evaporation reducing the volume of hot water, a layer of frost insulating the cooler water, and differing concentration of solutes. But the answer has been very hard to pin down because the effect is unreliable – cold water is just as likely to freeze faster.
James Brownridge, who is radiation safety officer for the State University of New York at Binghamton, believes that this randomness is crucial. Over the past 10 years he has carried out hundreds of experiments on the Mpemba effect in his spare time, and has evidence that the effect is based on the shifty phenomenon of supercooling.
“Water hardly ever freezes at 0 °C,” says Brownridge. “It usually supercools, and only begins freezing at a lower temperature.” The freezing point depends on impurities in the water which seed the formation of ice crystals. Typically, water may contain several types of impurity, from dust particles to dissolved salts and bacteria, each of which triggers freezing at a characteristic temperature. The impurity with the highest nucleation temperature determines the temperature at which the water freezes.
Brownridge starts with two samples of water at the same temperature – say, tap water at 20 °C – in covered test tubes and cools them in a freezer. One will freeze first, presumably because its random mix of impurities give it a higher freezing point.
If the difference is large enough, the Mpemba effect will appear. Brownridge selects the sample with the higher natural freezing temperature to heat to 80 °C, warming the other to only room temperature, then puts the test tubes back in the freezer. The hot water will always freeze faster than the cold water if its freezing point is at least 5 °C higher, Brownridge says.

It may seem surprising that moving the finish line by only 5 °C makes enough of a difference, when the hotter sample starts out 60 °C behind in the race. But the bigger the temperature difference between an object and its surroundings – in this case, the freezer – the faster it cools. So the hot sample will do most of its cooling very quickly, helping it to reach its own freezing point of -2 °C, say, before the cooler water gets to its freezing point of -7 °C.
Why has no one else noticed this? Brownridge says other people have not controlled the experimental conditions well enough to study one factor at a time. For instance, it is necessary to control the type of container, the location of a sample in the freezer and so on.
This work is unlikely to end the Mpemba debate. Jonathan Katz of Washington University in St Louis, Missouri, says he is sceptical. According to Katz’s own theory, heating raises the freezing point of water by driving off solutes such as carbon dioxide. This means that heating the water actually increases the chances that it will freeze first, unlike the more random outcomes suggested by Brownridge. “Perhaps he has found an effect of supercooling that resembles Mpemba,” says Katz.
How the Mpemba effect got its name
This peculiar phenomenon has a long history. It was first remarked on by Aristotle in the 4th century BC. “The fact that water has previously been warmed contributes to its freezing quickly; for so it cools sooner,” he wrote. “Hence many people, when they want to cool hot water quickly, begin by putting it in the sun.”
The effect was also known to Francis Bacon, who in 1620 wrote, “water slightly warm is more easily frozen than quite cold”. Then in 1637 René Descartes said, “Experience shows that water that has been kept for a long time on the fire freezes sooner than other water.”
In the 1960s, the effect came to the notice of modern science when a Tanzanian schoolboy called Erasto Mpemba told his science teacher he could make ice cream faster than normal by putting a heated mixture in a freezer. Mpemba was the laughing stock of his class until a school inspector in Dar es Salaam repeated the experiment and vindicated him.

A $1 million prize has been awarded to a mathematician for work that could one day unlock the secrets of prime numbers.
The King of Norway will officially present the prestigious Abel prize in May to John Tate, who recently retired from the University of Texas at Austin.
The award honours Tate’s work on number theory, a branch of mathematics that stretches back to ancient Greece. It deals with patterns of numbers and their properties, and although once considered “useless” by the mathematician G. H. Hardy, it is now crucial in keeping the internet secure.
Tate created many of the tools used to explore this world of numbers, and his influence is reflected in the sheer number of mathematical ideas that bear his name. “He’s like a spider that sits in the middle of the web and draws all the threads together,” says Ian Stewart, a mathematician at the University of Warwick, Coventry.
Fermat’s last theorem
Tate’s research helped prove Fermat’s Last Theorem, which puzzled mathematicians for over 350 years until it was solved by Andrew Wiles in 1995. The theorem says there are no whole numbers that fit the equation an + bn = cn if n is a whole number greater than 2.
The proof involves elliptic curves, shapes described by equations like y2 = x3 + ax + b, and Tate helped develop an understanding of how these curves behave.
Future Abel prizewinners may also benefit from Tate’s theories, as his doctoral thesis supplies the techniques needed to attack one of the hardest problems in mathematics: the origin of prime numbers.
Mathematicians have known for thousands of years that there are an infinite number of primes, but they don’t have an obvious pattern – some are clumped together, while others sit isolated on the number line.
Landscapes of numbers
Deciphering their distribution seems to depend on a formula for an infinite sum of numbers called the Riemann zeta function, which creates a mathematical landscape.
Feed it a pair of numbers – the coordinates on this map – and the zeta function will spit out the height of the landscape at that point. A longstanding – but famously unproved – conjecture called the Riemann hypothesis suggests that identifying points where the zeta function equals zero – and the landscape is at sea level – will reveal the pattern behind the primes.
Tate’s analysis shed new light on the zeta function, enabling mathematicians to further investigate its landscape. The same techniques will probably help solve other notoriously difficult problems.
Beyond the realm of pure mathematics, both prime numbers and elliptic curves find a practical use in cryptography. Secret codes based on splitting a large number into its prime factors are currently impossible to crack – perfect for internet and mobile phone communications. Tate’s work helps generate these codes, keeping us all safe from eavesdroppers and credit card thieves.

Coffee improves short-term memory and speeds up reaction times by acting on the brain’s prefrontal cortex, according to a new study.
Researchers used functional magnetic resonance imaging (fMRI) to determine how coffee activates different areas of the brain in 15 volunteers.
“Caffeine modulates a higher brain function through its effects on distinct areas of the brain,” explains Florian Koppelstätter, who carried out the research with colleagues at the Medical University at Innsbruck, Austria.
Prior to testing, the group fasted for 4 to 6 hours, and abstained from caffeine and nicotine for at least 24 hours. Then they were then given either a cup of strong coffee – containing 100 milligrams of caffeine – or a caffeine-free placebo drink. After 20 minutes all participants underwent fMRI scans while carrying out a memory and concentration test. A few days afterwards the experiment was repeated under the same conditions but each received the other drink.
Executive memory
During the memory tests, participants were shown a fast sequence of capital letters, then flashed a single letter on a screen and told to decide quickly whether this letter was the same as the one which appeared second-to-last in the earlier sequence. They had to respond by pressing a “Y” for yes or “N” for no.
“The group all showed activation of the working memory part of the brain,” Koppelstätter explains. “But those who received caffeine had significantly greater activation in parts of the prefrontal lobe, known as the anterior cingulate and the anterior cingulate gyrus. These areas are involved in ‘executive memory’, attention, concentration, planning and monitoring.”
“This type of memory is used when, for example, you look up a telephone number in a book and then mentally store it before dialling,” he adds.
Pick-me-up
Koppelstätter stresses that the study is preliminary and that he has yet to discover how long the memory effects last or what other effects coffee has on brain function. He adds that the long-term impact of caffeine use is also an important consideration.
But he says the study shows that coffee has an effect on specific brain regions involved in memory and concentration that tallies with anecdotal evidence of the drink’s “pick-me-up” effect.
Caffeine is known to influence adenosine receptors which are found throughout the brain on nerve cells and blood vessels. It is thought that the drug inhibits these receptors and that this excites the nerve cells in the brain. “This may be the mechanism involved,” suggests Koppelstätter.
The research was presented at the annual meeting of the Radiological Society of North America.

PARENTS made their feelings known at an inquiry into autism in further education.
The National Assembly for Wales took written and oral evidence from families directly affected by the disorder.
Marie Macey, Sandra Smith and Ann Pontin addressed the Assembly’s Enterprise and Learning Committee at the Senedd.
The review was announced in December following a damning report by the Assembly’s Cross-Party Autism Group (CPAG).
A Snapshot of Autism Education Provision in Wales revealed that 75% of schools surveyed felt there was a lack of adequate local help available.
About 58% described further education (FE) provision in Wales as inadequate.
The report was compiled last May based on information gathered from 33 education providers.
Group chairwoman, Plaid Cymru AM Janet Ryder, said it was inspired by real concerns.
“The report was produced with the clear aim of raising awareness of the issues, and stimulating discussion amongst decision-makers,” she said.
“We wrote to frontline providers for their views and the finished report therefore represents the views of teachers and lecturers who have the job of providing education.
“This then does give at first hand the views of staff.”
Contributors included statutory and independent special schools, mainstream schools with autism resources and FE colleges.
It examined topics such as the role of the Assembly’s strategic action plan on autism spectrum disorders, and disparities between state and independent provision.
The study followed a number of concerns raised at CPAG meetings, that young people with autism in post-16 education were missing out because of a lack of organisation, awareness and understanding.
One in 100 people in Wales has autism, with more than 6,000 under the age of 18 diagnosed.
Darren Jackson is principal at Sully’s Beechwood College, Wales’ first residential learning facility for young people with Autistic Spectrum Disorder (ASD).
Mr Jackson told the committee: “The strategy provides an exciting opportunity to develop and deliver much- needed and extended services in response to need.
“There is now a window of opportunity for Wales to develop and deliver a real vision of life- long education to all young people with an ASD regardless of where they are placed on the autistic spectrum.
“In order for this wider vision to succeed we must see the future through a holistic multi-faceted approach and not focused solely on a small range of component parts, such as training and short-term respite care.”
Learning with autism can give rise to particular challenges facing increasing numbers of Welsh families.
Many parents, including mother-of-two Sandra Smith, feel there is not enough being done for youngsters with autism.
Mrs Smith’s sons, who both suffer with ASD, travel from their home in Caerphilly to Penarth every day to avoid missing out on the specialist care they need.
Ryan, 18, and Luke, 14, were diagnosed within months of each other and Mrs Smith said looking after them was a full-time job.
“We have a situation whereby I have two boys whose special educational needs can’t be met,” said the former dietician.
“The numbers being diagnosed are increasing and there aren’t enough schools and resources to meet this need.
“There needs to be specialist colleges that provide FE and people really need to understand the needs of the kids.
“It is a very complex situation, but if these children aren’t educated in the right way they don’t make progress.”
Mrs Smith said the National Assembly had a duty to provide adequate education for all.
“I know it’s going to boil down to resources, but we’re talking about young adults who have profound autistic needs. They can’t be fobbed off,” she said.
“These are vulnerable people who can’t look after themselves and are dependent on society. They have fundamental, basic needs and can’t make an informed decision by themselves.”
Rebecca Evans represented the National Autistic Society Cymru at the inquiry.
She called for better transition between secondary and FE, and advance warning of funding for college placements.
“All too often college life for a young person with autism can be one of isolation, where their educational requirements are not understood or met,” said the charity’s policy and public affairs officer.
“However, we also know that there are examples of good practice in Wales – particularly where colleges have good autism awareness and a commitment to their legal responsibility to make reasonable adjustments for young people with disabilities.”
She added: “It is very encouraging to see that the Enterprise and Learning Committee is involving FE providers as part of this inquiry.
“After all, they are the ones who know the challenges and the resources required to deliver for young people with autism in Wales.”
